We start with a corn & high rye mash bill and carefully small batch distill to ensure the cleanest cuts for purity, allowing the notes of our grains to shine. We hand craft our bourbon in New American Oak barrels, at #3 and #4 char, and aged for a minimum of 4 years.

We then finish our bourbon specifically in used cabernet wine barrels resulting in a bourbon unmatched in flavor, complexity and sipping satisfaction. The cabernet barrels impart a hint of bright, red fruit flavors of strawberry, plum, and raspberry.

CRAFTED FROM A PURE RYE MASH
We start with a 100% rye mash bill and carefully small batch distill to ensure the cleanest cuts for purity allowing our spicy rye notes to shine. We hand craft our rye whiskey in New American Oak, #4 char barrels and age for 4 years providing the optimal wood and char to match the delicate rye grains. We then finish our rye whiskey in used cabernet sauvignon wine barrels resulting in a flavor, layered in complexity and sophistication. The cab barrels impart dark fruit flavors of blackberries, cherries, and blackcurrants. Moreover, the subtle addition of velvety cabernet tannins impart a more luxurious mouthfeel.

It all started with the Pacific Rails connecting the best of the East with the West, allowing the combination of the tried-and-true Old-World processes, including the 1800’s European design of our Pot Stills, with new Modern distilling techniques providing exciting creative opportunities.

Our Master Distiller, Brian Keck, is a highly educated and experienced distiller and vintner with a UC Davis Graduate Degree in Viticulture and Enology, experience in sensory analysis, and a UCLA graduate degree in Chemistry. Brian also has a significant and successful track record in craft distilling that includes award winning creations across numerous spirits varieties including vodka, gin, whiskey, rum, as well as less common varieties such as Draka, Brandy and Eau De Vie.
